CoreLife Eatery, a healthy-eating restaurant that will feature hearty soups and salads, will open Thursday in the Shoppes at Belmont.
CoreLife Eatery is taking a 2,800-square-foot space at 1581 Fruitville Pike, in the building behind Chick-fil-A. It will have around 50 employees.
The menu features customizable bowls of food built on a base of greens or grains, topped with vegetables or proteins, and mixed with broth. There are also a variety of signature bowls.
CoreLife Eatery emphasizes natural, additive-free ingredients and freshly made food. Among the extra steps it takes are slow-roasting chicken and beef bones for its broth and operating without a freezer.
Customers move through a cafeteria-style line as employees mix their selections. Franchisee Cory Heyman, who previously worked for a nonprofit in Washington, D.C., describes CoreLife Eatery as “the gourmet of fast casual.”
The restaurant has inside seating for 56 and room outside for 20. It will occasionally conduct yoga classes on Saturday mornings.
CoreLife Eatery was launched in 2015 by Larry Wilson with a restaurant in Syracuse, New York. The Shoppes at Belmont location will be the 37th, with about half operated by franchisees.
